Italian beef works well in sandwiches. It tastes exactly like my all-time favorite sandwich that I used to have at a neighborhood restaurant when I lived in a Chicago suburb, and it’s simple to make in a slow cooker. Serve with roasted sweet or hot peppers on crusty buns.

3 cups water
1 (.7 ounce) package dry Italian-style salad dressing mix
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon onion salt
1 teaspoon garlic powder
1 bay leaf
1 teaspoon salt
1 teaspoon ground black pepper
1 (5 pound) rump roast
Directions
- In a saucepan, mix the following ingredients: water, salad dressing mix, oregano, basil, parsley, onion salt, garlic powder, bay leaf, salt, and black pepper. Stir thoroughly then bring to a boil.
- Put the rump roast in the slow cooker, then cover it with the hot herb mixture.
- Cook covered for 10 to 12 hours on low or 4 to 5 hours on high. Take off the bay leaf, fork-shred the meat, and serve it with some of the hot gravy.
