Mash potatoes, flour, and eggs are the only three ingredients needed to produce gnocchi. My family has used this recipe for many years.

2 potatoes, peeled
2 cups all-purpose flour
1 egg
Directions
- Potatoes should be cooked for about 15 minutes, until they are soft but still firm, in a large saucepan of boiling salted water. With a fork or a potato masher, drain, cool, and mash.
- In a sizable basin, mix 1 cup of mashed potatoes, flour, and egg. Knead the dough until a ball forms. Cut little pieces of dough into the shape of long “snakes.” Slice the snakes into 1/2-inch pieces on a floured surface.
- Large saucepan of lightly salted water should be brought to a boil. Gnocchi should be dropped in and cooked for 3 to 5 minutes, or until they float to the top. Drain and serve.
